Vineyards: Old vine Chenin Blanc planted on south facing, well weathered granite derived soils. These vines add complexity and structure to the younger and intensely aromatic Viognier and Chardonnay blocks, which are planted in more alluvial soils lower in the valley.
A low average crop of 8 tons per hectare ensures concentration and all the fruit is picked according to taste at an optimum ripeness, ranging from 21-23°Balling
