Barrel fermentation with wild yeast. Pale yellow with green hues. Poached nectarines, passion fruit, grapefruit characters, cumquat, wild thyme and line citrus on the nose, Slightly creamy, rich in texture, complex on palate.
Pale yellow with green hues. Very aromatic; poached nectarines, passion-fruit, mealy grapefruit, cumquat, wild thyme and lime citrus. Slightly creamy, rich in texture, complex (thanks to the ‘wild’ yeast) upfront, succulent. To follow; caramelised citrus fruits, flinty lees, stone fruits. It’s wonderfully persistent, long and generous. A powerful and opulent wine. The 2015 Black Edition Sauvignon Blanc is a complex, rich alternative style of sauvignon Blanc, fermented with 100% ‘wild’ yeast in older barrels. A partial malolactic fermentation softens the trademark acidity of this variety and produces a creamy, complex, mellow Sauvignon Blanc which will continue to develop gracefully in bottle.
