The grapes are left intentionally to ripen until late October or early November. Manual harvest with careful selection of the best grapes, both in the vineyard and in the cellar. After a slight crushing, a skin maceration followed for 12 hours. Fermentation took place in old French oak barrels, which was then interrupted by the cold.
Greenish tone with reflections of bright straw. Lots of minerality, green apples and apricots. It also has notes of oyster combined with citrus fruit. Overall, it is fine and delicate. Creamy and concentrated, with refreshing acidity. The finish is intense and prolonged, bringing notes of minerality and sea again.
