VINEYARDS AND VINIFICATION
Cabernet Sauvignon—the king of grapes. Our fruit is sourced from family-farmed vineyards in the Voor-Paardeberg region of Paarl, along with a small, select vineyard in Stellenbosch. Grapes are hand-harvested in the early hours of the morning to preserve the vibrancy and integrity of their delicate fruit flavours.
The bunches are destemmed, and the berries meticulously sorted to remove any vegetal material that could impart unripe characteristics. A partial crushing of the berries promotes slow, gentle extraction of tannin and colour, allowing an extended window for Matthew to determine the optimal time for pressing. Carefully managed punch-downs, gentle pumpovers, and moderate fermentation temperatures enhance the wine’s longevity, structure, and character.
The wine is matured for 18 months in 300L French oak barrels, allowing the fruit and tannin components to harmonise. With one third new oak, the wood supports and elevates the wine’s ample complexity and bold structure without overshadowing its natural expression.
