VINEYARDS AND VINIFICATION
Merlot is a signature variety of Copeland Wines. Our grapes are sourced from family farmed vines in the Voor-Paardeberg region of Paarl. Hand-harvested in the cool early hours of the morning, the fruit retains its vibrancy and preserves the integrity of its delicate flavours.
The bunches are destemmed, and the berries meticulously sorted to remove any vegetal matter that could impart unripe characteristics. Two thirds of the berries are gently crushed to encourage tannin and colour extraction, while the rest of the berries remain intact and are broken down slowly by fermentation, creating an extended window for Matthew to determine the optimal time for pressing.
Carefully managed punch-downs, gentle pump-overs, and a moderate fermentation temperature maximise the wine’s long-term expression, balance, and character. The wine is matured for 18 months in 300L French oak barrels, harmonising fruit and tannin components. A restrained use of new oak (one-third) enhances complexity and structure without overshadowing the natural exuberance of the Merlot.
